something pumpkiny


I woke up this morning and knew I had to bake something. And it had to be pumpkiny. I decided on pumpkin chocolate chip cookies. I already had all of the ingredients except for the pumpkin.

I dread grocery shopping with these kiddos. It had to be done if I wanted my pumpkiny cookies. I took a quick shower (with Cate sticking her fingers under the bathroom door and crying for me the entire time) and off we went to the grocery store. I could have saved some time and skipped the shower had I decided to shop at Walmart (no offense to Walmart or its patrons), but the grocery store is closer and it has those humongous carts that can hold three kids.

The highlight of the grocery store trip was the realization that Kris had stepped in doggy doo somewhere between the front door and the truck. I didn't figure that out until we were in the grocery store parking lot. He had gotten it on the floor of the truck and then transferred it to his pants as he was sliding out. Ah, another dreadful trip to the store. Really, these little darlings never cease to amaze me.

Here's the recipe for the cookies in case you're wanting to make something pumpkiny too.

I doubled it. I figured that if they were really yummy, I could share. Sadly though, I did not have as many chocolate chips in the pantry as I thought I did. Double recipe, half the chocolate chips. Not a good combination.

That didn't stop me from eating six or seven a few.

Cathy, so sorry to hear about the shopping trip and your undoubtedly yummy but way too complicated pumpkin choc. chip cookie recipe! Try this one next time, 3 ingredients, no measuring (kinda) and easier to make than they are to eat!
WORLD'S EASIEST PUMPKIN CHOCOLATE CHIP COOKIES
1 box Spice cake mix, dry
1 can pumpkin (not pumpkin pie filling)
small if you want some pumpkin & moist
cookies,
big if you want lots of pumpkin & very moist
cookies,
half a big if you can't find the small (the
extra freezes nicely, or stores in the fridge
for a couple of weeks).
1 bag chocolate chips, any variety

Combine ingredients. Scoop onto cookie sheet-lined with parchment or greased. Bake at 375 degrees for 10-15 minutes (I check at 10, they are never ready and always need 2 or 3 more minutes, but ovens vary). Let sit on pan for a minute to set up, remove to cooling rack.

They taste almost like pudding when they are warm and so delicious when they are cooled! We love these cookies so much I had to buy new jeans this fall. At least thats what I am saying! Suzy

PS Abby really loves these cookies, and they are yummy with lots of chips, a little bit of chips and I even like them without any chips! That is the kind I make for Abby, but I eat them too!
