world's easiest pumpkin chocolate chip cookies

Anonymous (a.k.a. this cute little pumpkin's Aunt Suzy) left a comment about my pumpkiny cookies that deserved a post of its own. And just in case you don't already know, Abby (down there in her PS) is a fur person that says woof.


Cathy, so sorry to hear about the shopping trip and your undoubtedly yummy but way too complicated pumpkin choc. chip cookie recipe! Try this one next time, 3 ingredients, no measuring (kinda) and easier to make than they are to eat!

WORLD'S EASIEST PUMPKIN CHOCOLATE CHIP COOKIES

1 box Spice cake mix, dry

1 can pumpkin (not pumpkin pie filling) small if you want some pumpkin and moist cookies, big if you want lots of pumpkin and very moist cookies and half a big if you can't find the small (the
extra freezes nicely, or stores in the fridge for a couple of weeks).

1 bag chocolate chips, any variety

Combine ingredients. Scoop onto cookie sheet lined with parchment or greased. Bake at 375 degrees for 10-15 minutes (I check at 10, they are never ready and always need 2 or 3 more minutes, but ovens vary). Let sit on pan for a minute to set up, remove to cooling rack.

They taste almost like pudding when they are warm and so delicious when they are cooled! We love these cookies so much I had to buy new jeans this fall. At least thats what I am saying! Suzy

PS Abby really loves these cookies, and they are yummy with lots of chips, a little bit of chips and I even like them without any chips! That is the kind I make for Abby, but I eat them too!


Thanks, Suzy! Danny likes to help me bake. Maybe having a recipe with only three ingredients is a good way to let him help, and then shoo him out of my kitchen faster. I guess if you're looking for quick and easy, World's Easiest Pumpkin Chocolate Chip Cookies are the way to go. I'll give them a try.

The only problem is that now I have to go to the grocery store again.

I have made this variety before, and they are definitely easy and delicious. But wait until Dan's home to go to the store. Or maybe I'll call you if/when I'm out and about to see if I can pick anything up for you. :)

LOL! Literally! You are sooo welcome! Buy a couple cans of pumpkin, cake mixes and chip bags because this is a FAVORITE you will make a lot-I am even contemplating taking some for the Cruise-Miami won't have yummy cookies like these! :) Suzy
